The Fall Classic- Turkey, cheddar and cranberry slaw

If you’re a fan of sweet juicy apples straight from the farm, sharp cheddar, turkey and cranberries……..you’re going to love this sandwich!!


This sandiwch reminds me of the one you could purchase at Panera. However, I’ve ommited the cranberry walnut bread and used a Flatout Foldit! Then added the craberries to a healthy and super simple slaw!


Over the past 3 years we have found healthier ways to make some of our favorites by using lots of non-fat Greek yogurt!


You can meal plan and use this recipe for several days during your week or take it with you to the farm for a sweet picnic!


It only takes a few minutes to mix up the cranberry walnut slaw. Thank goodness for bagged slaw - found near the bagged salad mixes! It makes it so easy to whip up a bowl of slaw mix.


Next, I slice a whole apple and store it in another container. I’ll give you my super secret! But shhh don’t tell anyone :-) Wash your apple with thieves fruit and veggie soak! It will help clean but also we have noticed that our fruits and produce last so much longer when they are washed with essential oils. If you want to cut a few slices ,be sure to add lemon essential oil to the bowl and then shake the apples around, so they don’t brown.


Doing these few simple task (stocking refridgerator and prepping key ingredients) help keep me on target for healthy eat then I’m set for a quick lunch all week!! 


So easy and so delicious! Give it a whirl!




INGREDIENTS:

  • 4 pieces of flatbread (I use Flatout Foldit)

  • 4 ounces oven roasted turkey

  • 4 slices sharp white cheddar

  • 1 Gala apple, thinly sliced

for cranberry walnut slaw:

  • 1 cup slaw mix

  • 1/2 cup non-fat plain greek yogurt

  • 1/3 cup dried cranberries

  • 1/3 cup chopped walnuts

  • 1 tablespoon lemon juice

  • 2 teaspoons honey

  • 1 teaspoon apple cider vinegar

Instructions

  1. In a small bowl combine slaw ingredients and mix until well coated.

  2. On flatbread, layer turkey, cheese, and apple slices. Top with slaw mix and fold flatbread and enjoy!
